Chef Matsunae honed his craft at Kohou (one-Michelin-starred Chinese) and MAZ (two-Michelin-starred innovative). What he built there was not only the foundations of Peruvian flavour, but a philosophy that treats cuisine as a language for telling land, history and memory.
What he moved to Ginza to express was never simply "food" — it was an experience that renders the memory of the earth and the history of civilisations on the plate.
